Holsteins Closing At Cosmopolitan

The Cosmopolitan of Las Vegas’ burger and shake spot, Holsteins, is closing. Fans will have until July 9, the restaurant’s final day of operation on Level 2 of the resort’s Boulevard Tower, to get one last taste of their Prime beef burgers and adults-only Bam-Boozled shakes.

Stacia Stephens, president of the restaurant’s parent company Gen3 Hospitality, has issued a statement saying in part:

“Holsteins, which has wowed fans with its over-the-top burgers and shakes since its opening along with The Cosmopolitan of Las Vegas in 2010, will permanently close Tuesday, July 9. Details on an exciting new concept by Gen3 Hospitality … will be shared in the coming months.”

According to the statement, employees were notified of the decision this morning (May 10), and will be encouraged to re-apply for positions with the new restaurant.

Holsteins is known for large, juicy burgers piled high with toppings (which stand in stark contrast to “smash burgers” that have become popular over the past few years). Their signature burgers include the Gold Standard (dry-aged beef sirloin topped with smoked bacon, aged goat cheddar cheese, tomato confit, baby arugula, garlic-chive aioli) and the Billionaire Burger (a foie gras and prime beef blend, topped with provolone, mushrooms, onion marmalade, port reduction, crispy onions, arugula, truffle pâté). Nine alcohol-infused milkshakes are just as decadent.

When asked about the fate of the Holsteins outpost in Allegiant Stadium (located in Section 106), a spokesperson reported that the lease on that outlet expires this weekend.
