Pick of the Week: Nudo Italiano

Nudo Italiano is the latest restaurant from local restaurateurs Jenna Morton and Michael Morton. It adds to their Morton Group collection, which includes La Cave Wine & Food Hideaway at Wynn, CRUSH and Greek Sneek at MGM Grand, and ONE Steakhouse at Virgin Hotels.

The new restaurant in Southern Highlands at the NE corner of Cactus and Arville is their first in a Las Vegas neighborhood, well outside the tourist corridor. It’s a full circle return to the beginning of Michael Morton’s career as a restaurateur, harkening back to his opening neighborhood eateries 35 years ago in Chicago. Nudo’s opening comes nearly 20 years after Nove Italiano debuted high atop the Palms (which closed in 2018) and marks a return to Italian cuisine.

Michael said, “We’ve always been in the resort corridor till this. Southern Highlands has been waiting for something like this, and it feels good. My dad (Arnie Morton, co-founder of Morton’s Steakhouses) instilled in me [the] value. One can eat this every night.” Jenna added, “We wanted to create a place that feels like home—where families, friends, and neighbors can come together to share great food, celebrate milestones, and build memories. There’s nothing more Italian than that.”

The space is warm and inviting with wall tiles in the bar and open kitchen, a piano, wood paneling and tables, wood flooring, and a beige and tan color scheme. Large windows on two sides allow for natural light, adding to a bright and comfortable feel.

At the helm of the kitchen is Morton Group Culinary Director William DeMarco, whose menu features handmade pastas; house-baked breads; eight varieties of Neapolitan-style pizzas fired in a traditional wood-burning oven like Diavola with sopressata and Calabrian chili; and main courses like Bistecca alla Fiorentina 16 oz t-bone, Veal Picatta with caper and spinach, and pan-roasted Branzino with eggplant purée and roasted cherry tomatoes.

Standouts from the Antipasto menu are Antipasti with salami, grilled artichoke, and house-baked focaccia; calamari with lemon aioli, arrabbiata sauce, and sweety drop peppers; and crudo of yellowtail tuna with garlic chips, pistachio, and mint.

The stars of the show are the pastas, with the simple yet elegant Mezzi Rigatoni: cacio e pepe with black pepper and pecorino cream; Pappardelle with veal ragu and sheep’s milk ricotta; and Pipe Rigate with vodka sauce, prosciutto, onion, and tomato. Be sure to indulge in the Risotto made with lemon and pecorino, offered as a side dish that could easily be a meal for one and priced at a mere $8.

Dubai chocolate is all the rage right now, so you’re in luck. The Dubai Pistachio Cake highlights the dessert menu with kataifi nest, chocolate drizzle, and Sicilian pistachios.

Complementing the cuisine is a wine list with varietals mainly from Italy, Sonoma, and Napa; specialty cocktails like Godfather with Johnnie Walker Black Scotch, Amaretto, and chocolate bitters; a Spritz Bar with prosecco creations; and a beer selection including local CraftHaus Belgard Coffee Stout and Big Dog’s Las Vegas Lager.

This new neighborhood eatery certainly shines with the magnificent offerings of a restaurant group that has proven to bring excellence to all its eateries. However, as it should be, the prices here are well below those on the Strip at a comfortable price point (with most dishes under $20), but the quality is the same.

Nudo is currently open daily starting at 4 p.m., and brunch hours are coming soon. For more information and to view the complete menus, visit nudolv.com.
