Don’s Prime — December 19
Don’s Prime Steakhouse at Fontainebleau Las Vegas will host a multi-course white truffle wine pairing dinner.
The pairing menu includes:
- Toasted Brioche with quail egg, caviar, and shaved white truffle paired with Brut, Benanti “Noblesse,” Sicily NV
- Seared Sea Scallop with cauliflower purée, thyme infused extra virgin olive oil and shaved white truffle matched with Nascetta, Elvio Cogno “Anas-Cëtta,” Langhe, Piedmont 2023
- Ricotta Gnocchi with herb brown butter, parmesan, and shaved white truffle paired with Barolo, Elvio Cogno “Ravera, Bricco Pernice,” Piedmont 2018
- Braised Wagyu Beef Short Rib with creamy polenta, roasted root vegetables, and shaved white truffle matched with Barolo Riserva, Elvio Cogno “Ravera, Vigna Elena,” Piedmont 2017
- Olive Oil Gelato with honey, candied hazelnuts, and shaved white truffle paired with Vin Santo del Chianti Classico, Volpaia, Tuscany2019.
The dinner will begin at 7 p.m., and tickets are $850 per person (plus 20% gratuity and 8.375% sales tax).

Eiffel Tower Restaurant — December 24-25
Eiffel Tower Restaurant at Paris Las Vegas will offer a multi-course dinner of French-inspired holiday dishes on Christmas Eve and Christmas Day served from 5 to 10 p.m.
Priced at $155 per person (plus tax and tip), the meal includes choice of Casco Bay Sea Scallops, Marbré of Pheasant with foie gras, or Winter Greens Salad; Filet of Branzino, Beef Tenderloin with peppercorn sauce au poivre, Roasted Chicken Breast, or Portobello Roulade; and Peppermint Soufflé or Eiffel Tower Crème Brûlée.

Honey Salt — December 26-28
Honey Salt will offer a full Hanukkah dinner from December 26-28, available from 5 p.m. to closing.
Priced at $59, it includes Challah with honey butter, Matzo Ball Soup with braised chicken and vegetable, and Potato Latkes with house apple sauce and sour cream & chives; choice of Roasted Jidori Chicken with kasha varnishkes and bowtie pasta or Slow Roasted Brisket with Brussels sprouts and tzimmes; and Sufganiyot Donuts with berry preserves. Dishes are also available a la carte.
Pick of the Week: Jason Aldean’s Kitchen + Bar
Country superstar and Academy of Country Music Artist of the Decade Jason Aldean is bringing “Nashville’s kinda party” to the heart of the Las Vegas Strip by opening Jason Aldean’s Kitchen + Bar.
The restaurant and bar in the 63 CityCenter building, one floor beneath the Ocean Prime steakhouse at Harmon and Las Vegas Boulevard, is the fourth US location of TC Restaurant Group.
The two-story venue spanning 22,500 square feet features two live music stages showcasing daily performances ranging from country to Top 40 hits, six bars, and a sprawling outdoor terrace overlooking the center of the Vegas Strip.
The venue’s iconic centerpiece, Tractor Bar, features a green vintage 4020 John Deere Tractor (a tribute to Aldean’s multi-platinum hit “Big Green Tractor”). The décor also includes a blend of rustic charm with modern elements with exposed stone, reclaimed wood, neon signs, industrial accents, a remembrance mural for the victims of the shooting at the Route 91 Harvest country music festival, and memorabilia showcasing Aldean’s career including record plaques of his best-selling songs, guitars, and family photos.
The food menu features elevated a Southern-inspired menu packed with comfort food classics straight from the Aldean family cookbook, such as Grandma’s Pot Roast—braised fork-tender beef roast, mashed potatoes, and roasted carrots with charred cipollini onions; Southern Meatloaf—beef and pork blend, wild mushrooms, BBQ demi-glace, mashed potatoes, and crunchy onion straws; Southern Nachos—slow-cooked pulled pork, cheddar and queso cheeses, smoked bacon, and kettle chips drizzled with Jason Aldean’s Georgia-style Bourbon BBQ sauce; Jason’s Mac & Cheese with beer-brined chicken, cavatappi pasta, creamy Pepper Jack, bock beer, bacon, and herbed panko crust; Nashville Hot Chicken Salad with crispy hot chicken, bacon, bleu cheese crumble, mixed greens, and ranch; and Mama Aldean’s Peach Cobbler served with vanilla bean ice cream and topped with caramel.
The bar menu offers signature cocktails named after Aldean’s biggest hits and a selection of local and national draft beer.

Green Valley Ranch Hosting Winter at the Terrace
Green Valley Ranch Resort Spa & Casino is again hosting its “Winter at the Terrace” holiday-themed pop-up lounge from Nov. 29 to Feb. 15.
Located at the resort’s Lobby Terrace, the winter experience features cozy private igloos and fire pits, twinkling lights, cheerful music, merry photo opportunities, a hot chocolate cart, winter-inspired libations, light bites, and sweet treats.
Cocktails include Under the Mistletoe with Flecha Blanco, Pama Pomegranate, cranberry, sage, lime, salt, and Fever-Tree Sparkling Grapefruit; Winter Wonderland with Absolut Vanilla, White Crème de Cacao, peppermint, cream, citrus, and club soda; and Baby it’s Cold Outside with Glenmorangie Triple Cask, Taffer’s Browned Butter Bourbon, spiced apple cider, and salted caramel foam, topped with cinnamon and served hot.

Rí Rá Offering Training on the Perfect Pour
Rí Rá at The Shoppes at Mandalay Place has established its reputation as an authentic Irish pub. It has all the accoutrements needed to attain this distinction, as it was constructed from a pub meticulously restored in Ireland then shipped to Las Vegas, almost every inch of the space decorated with Irish bric-a-brac, more than 300 whiskies, several Irish beers, and bartenders trained to pour the perfect Guinness pint.
You can be trained on how to execute the perfect pour by participating in the Perfect Pint Experience (an add-on to group dining or private parties), which includes step-by-step instructions, a certificate, and a Guinness logo-ed pint glass.
The steps are:
- Select a clean, branded glass.
- Holding the glass at a 45-degree angle to the tap, open the tap fully by bringing the handle all the way down toward you. As the beer fills, adjust the glass to an upright position, closing the tap when the beer reaches the top of the gold harp on the front of the glass.
- Allow the beer to settle fully until the entire pint is a consistent color throughout (about 90 seconds).
- Top up the beer by pushing the tap handle away from you until the head height is between one-half to three-quarters of an inch above the rim.
- Serve the glass with the Guinness logo facing toward the guest.

Voyage — February 14
The premier Journey tribute band Voyage will perform on Valentine’s Day at the M Resort Spa Casino’s M Pavilion. During the concert, Journey favorites that defined the ‘80s will be performed, such as “Faithfully,” “Open Arms,” “Send Her My Love,” “Don’t Stop Believin’,” and “Any Way You Want It.”
Since 2005, Voyage has been hailed as the #1 Journey tribute band. Frontman Hugo, a dead ringer for Steve Perry in looks and vocals, is joined by world-class musicians Robby Hoffman, Greg Smith, Lance Millard, and Dana Spellman.
