Julian Serrano Tapas, in ARIA, will be closing its doors permanently after service on February 1.
Chef Serrano has had a presence on the Las Vegas Strip since the opening of Bellagio in 1998 — first with his fine-ding restaurant Picasso and later at this eponymous tapas spot in ARIA and Bellagio’s Lago.
Last May, MGM Resorts International announced his retirement plans, which began with him stepping away from the kitchen at Lago and included the closure of Picasso last summer.
Julian Serrano Tapas opened in 2009 and has received awards from Forbes, Wine Spectator, Esquire, Desert Companion and others.
In a press release announcing the closure date, ARIA’s President and COO Ayesha Molino says, “The culinary excellence and influence Chef Serrano brought to ARIA for the past 15 years is a testament to his talent and unwavering work ethic. He consistently led the restaurant and chef teams with professionalism, offering mentorship to all who worked alongside him, pushing each individual to deliver world-class hospitality to our guests. His contributions are sincerely appreciated, and we wish him and his family joy and good fortune in the future and beyond.”
