The Food and Loathing Podcast – April 4

In what may be a record for both length and content, this week’s episode of Food & Loathing is packed with news, interviews and revelations.

You’ll hear from three women behind the Women’s Hospitality Initiative: Elizabeth Blau, Nina Manchev, and Chef Lorena Garcia.

Blau referred to “the broken rung,” a metaphor for women often suffering from a lack of support and mentorship in their careers. “Women and men were entering the workforce in the U.S. in equal numbers, but women were actually falling behind [in] that entry-level job. Nobody was getting anywhere near a glass ceiling,” Blau said.

Blau explains that the Women’s Hospitality Initiative offers a college-level course, “From the Classroom to the Boardroom,” to help women achieve management roles in the hospitality industry. The course is for anyone in hospitality who wishes to understand the support, tools, and community needed to encourage and promote women’s advancement throughout the hospitality space.

Also this week: Bryce Krausman talks to Al Mancini about his decision to close DW Bistro after 15 years.

His pioneering off-Strip joint filled what he said was a gap in the market. “What was missing in Vegas was brunch,” Krausman said of the scene in 2010. “Other food critics in town said it was too far away,” Krausman added, noting the explosive growth in Southwest and Summerlin during the life of DW Bistro.

Another westside pioneer, Dan Krohmer, talks about Other Mama, his seafood and sushi place, celebrating ten years in business. Like DW Bistro, Other Mama showed up when few others were venturing as far west as Durango.

“It was just the right timing, when the city was really ready to embrace things happening off The Strip,” Krohmer said. As for the state of his neighborhood a decade later: “It’s really cool. (We’re) starting to see a lot of authentic ethnic restaurants opening. It’s really a multi-cultural side of town.”
