Chef Rick Bayless is bringing his spin on Mexican cuisine back to Las Vegas. A new deal with Caesars will bring his fast-casual Torta (sandwich) spot, Tortazo, to Caesars Palace in late summer this year. The deal also includes a Tortatzo at Harrah’s Joliet, outside of Chicago, which is expected to open in the spring.
A Caesars press release promises that, besides tortas, the menu will offer “a variety of bold and flavorful Mexican dishes like mouthwatering tacos, quesadillas and house-made churros.”
Bayless has operated in Las Vegas before. His long-shuttered Diego inside MGM Grand was a launching pad for legendary local pizza maker Chris Palmeri (who currently operates Naked City Pizza).
