Pick of the Week: Rebellion Pizza

Rebellion Pizza opened in the Anthem area of Henderson in 2021 and enjoyed immediate success and acclaim. Now, the NY- and Sicilian-style pizza makers Ricky Lewis, Ryan Perras, and Tex Gibson have opened a second location on the opposite end of the Vegas Valley in the Tenaya Village Center in Centennial Hills.

The new digs are twice the size of the original Anthem store. There’s a spacious lobby and to-go counter separate from the dining area, and the oven space and kitchen size are doubled, allowing them to double their output and sales.

PC: David Canela

Like the other location, the décor features space elements and a Star Wars theme, with a mural by local artist Delano Yepes depicting a spaceship and an astronaut with a pizza slice. The much larger dining room also has red tufted booths, walnut wood, white wall tiles, and six large-screen TVs, all tuned to different programming.

The beer list is 100% local, with dozens of choices representing all major beer styles from nearly every brewery that distributes, including Able Baker, Big Dog’s, CraftHaus, HUDL, and Lovelady. Both Rebellion locations have the distinction of offering the largest selection of local beer in Southern Nevada.

The pizza dough is a lengthy process and worth the wait. A 24-hour starter period is followed by 48 hours of cold fermentation. The dough is used for the pizzas as well as for focaccia and sesame roll bread used for the Italian Focaccia Sandwich (piled high with prosciutto, soppressata, hot coppa, provolone, arugula, tomatoes, and banana peppers) and the Meatball Sub (smothered in marinara with melted provolone).

You likely came for the pizza; for most diners, a single humongous slice is filling enough. Still, there are a baker’s dozen of unique 12” or 16” pies such as the meaty Supreme Leader with pepperoni, bacon, sausage, red onion, bell peppers, and mushrooms; The Stunner with vodka sauce, pepperoni, jalapenos, fresh basil, and a sesame seeded crust; Veggie with tomato, artichoke hearts, mushrooms, roasted red peppers, and red onions; and Centennial with crushed meatball, ricotta, mozzarella, and red onions.

In addition to the pies and sandwiches, several starters worth indulging in include Rebel Knots—bite-sized deep-fried knots tossed in garlic and topped with Pecorino Romano and Mike’s Hot Honey; Buffalo Wings; Chicken Tenders; and Burrata Bake—burrata melted into house marinara with julienne basil served with toasted focaccia (dine-in only).

70% of sales are takeout and delivery. It’s important to note that Rebellion uses all delivery platforms without the higher menu prices tacked on by the delivery services (click on delivery on the Rebellion website).

Many loyal customers who were making the trek several miles from their home are rejoicing at having a closer location, and new fans are discovering the awesomeness of this unique eatery.

Rebellion Pizza is open Tuesday through Saturday from 11 a.m. to 9 p.m. and Sunday and Monday from noon to 8 p.m.
