Pick of the Week: Carversteak

Since its debut at Resorts World in Dec. 2021, Carversteak has been recognized as one of the Las Vegas Strip’s premier luxury steakhouses and has earned accolades including “Best Tried & True Steakhouse” from Vegas Magazine in 2023 & 2024 and “Best Cocktails” award on Las Vegas Weekly’s 2023 Best of Vegas list.

Covering 13,500 square feet, Carversteak is among the largest luxury steakhouses in the city. The bar and dining room are decorated in Art Deco and mid-century modern style with fun neon-embedded artwork. There is also an expansive lounge, two private dining rooms, and an enclosed terrace bar and garden with sweeping views of the Strip.

The kitchen is helmed by Carver Road Corporate Executive Chef Daniel Ontiveros, who has worked with and for some of the world’s most renowned chefs, including positions at Joël Robuchon, Thomas Keller Bouchon Bistro, Michael Mina’s Nobhill Tavern, and Scotch 80 Prime.

The menu, created by Ontiveros, features a variety of cuts of Japanese A-5, Australian and domestic wagyu, and wet- and dry-aged American steaks from renowned artisan producers such as Allen Brothers, Creekstone Farm, and Snake River Farms. Before your steak is delivered, your server will present a classy wood box emblazoned with “Choose Your Weapon.” It contains five custom-made steak knives with various handles for you to select from. Add-ons are Alaskan King Crab, Lobster Tail, Black Truffle Butter, Roasted Bone Marrow, and Hudson Valley Seared Foie Gras; and sauces include house-made Cs-steak sauce, red wine Bordelaise, peppercorn, bearnaise, hollandaise and Point Reyes blue cheese.

The chef shows his versatility and mastery of combining ingredients with standout dishes such as Wagyu Cheese Slider with caramelized onions, aged provolone mornay, and truffle on a buttered Parker Roll; Big Eye Tuna Tartare with tapioca cracker, avocado, and aji Amarillo aioli; Atlantic Salmon with Dijon gremolata, chickpea panisse, Swiss chard, and Romesco sauce; Mac N Cheese with cavatappi pasta emboldened with aged Irish cheddar; Brussels Sprouts with pomegranate, honey, and chili flake; and Pommes Purée (mashed potatoes) that are equal parts potato and butter.

Pastry Chef Abby Mullins ably composes desserts. Not to be missed is her Baked Nevada (similar to Baked Alaska) with strawberry and raspberry sorbet, toasted meringue, and coconut lime cake, which transforms into a theatrical presentation when your server ignites it with 151-proof rum.

Carversteak takes whiskey so seriously that one of its two private dining rooms is the Whiskey Room, where private tastings are held, and some of its rarest bottles are stored in attractive cabinets. Carver Road Hospitality Vice President of Beverage & Hospitality Culture Master Mixologist Francesco Lafranconi curates the collection of 240+ expressions. It’s one of Las Vegas’s largest in terms of rare, one-off creations, including some that you can only find here, like the Carversteak Maker’s Mark 46 Private Selection Single Barrel.
