Wynn Las Vegas Chef Sarah Thompson, who oversees the kitchen at Casa Playa, will venture off The Strip to launch a new late-night pop-up series at Chinatown’s Sparrow + Wolf
The bi-monthly series, called Bar Snacks, will debut on Saturday, August 31. It will offer late-night food, drinks and entertainment at the Spring Mountain Road restaurant.
“Bar Snacks is gonna be this place to share collaboration, camaraderie and community together,” says Sparrow + Wolf’s Brian Howard. “So [we’ll be] bringing in local artists, local entertainers, different chefs and mixologists that will be able to share the room together and just have fun.”
The kickoff event will run from 11 p.m. to 2 a.m., with two seatings: 11 p.m. and 12:30 a.m. In addition to food by Thompson, guests will enjoy cocktails by Chris @notjustabartender Leavitt, music by Just Alliance, and what they’re calling “only-in-Vegas variety acts.”
The menu will be a la carte.
“The food is mostly small, small bar snack size food, but done in a very elevated way,” says Howard. “Ideally, you’ll have a selection of eight to 10 dishes, probably four to six different cocktails, maybe some large format stuff, and then some surprise dishes.”
Moving forward, the chef plans to extend invitations to “not just local chefs, but chefs from around the country.” But he says Thompson was a no-brainer for the launch.
“She’s my favorite chef in town,” adds Howard. “When I think about food and what’s happening on The Strip, I think she’s nailing it.”
